Summer Peach Cobbler


4 Tbsp Lewis Road Creamery butter
6 ripe peaches, stone removed & cut into thin wedges
½ cup brown sugar
1 tsp vanilla extract

1 cup all-purpose flour
½ cup brown sugar
¼ cup ground almonds
2 tsp baking powder
1 tsp cinnamon
125g Lewis Road Creamery butter, melted
1/2 cup full-fat milk
1 tsp vanilla extract
1 Tbsp raw sugar

    Preheat your oven to 375°F.

    Add butter to an oven-proof skillet on medium heat. Once melted and starting to foam, remove from heat. Add the peaches, brown sugar, bourbon and vanilla. Toss to combine. Bake peaches in skillet for 15-20 minutes, until starting to soften.

    In a large bowl, whisk together the flour, brown sugar, ground almonds, baking powder and cinnamon. Add melted butter, milk and vanilla and mix, until just combined. Remove skillet from the oven and dollop batter over the peaches. Dust with raw sugar. Return to oven and bake for 25-30 minutes, or until golden. Serve warm with ice cream
