Choc-Orange Keto Bliss Balls
1 tbsp chia seeds
300g macadamia nuts
120g desiccated coconut
2 tbsp xylitol
2 tbsp cacao powder
1 tbsp orange zest
30g Lewis Road Creamery Butter, melted, cooled
Pinch of sea salt
Place the chia seeds and 2 tablespoons water in a bowl. Set aside for 10 minutes, stirring occasionally, until water has been absorbed and mixture is gel-like.
Place the macadamias, 1 cup of the coconut, xylitol, cacao powder, zest, butter, chia mixture and salt in the bowl of a food processor. Process until finely chopped and well combined.
Transfer nut mixture to a bowl. Roll level tablespoonfuls of mixture into balls. Place remaining coconut on a plate. Rolls balls in coconut to lightly coat.
Store in an airtight container in the fridge from up to 1 week.
