Herbed Butter Radish Toasts
Ingredients
Chilli Herb Butter:
227g Lewis Road Creamery salted butter
30g mixed fresh herbs, such as basil & flat-leaf parsley
½ tsp each chilli flakes & freshly cracked black pepper
Zest of ½ lemon
Fried Eggs on Toast:
2 large eggs
4 radishes, thinly sliced
2 slices keto bread, toasted
Fresh Herbs, to garnish

Add all chilli herb butter ingredients to a mini food processor. Blitz everything together with a big pinch of flaky salt, until combined and smooth. Store in an airtight container in the fridge.

Heat a knob of butter in a medium, non-stick fry-pan on medium-high heat. Crack eggs into pan and season with salt. Cook for 2-3 minutes, until crispy and golden underneath. Cover the pan with a lid and continue to cook for 1 minute, or until egg is cooked to your liking.

Serve keto toast spread with some chilli herb butter. Top with a fried egg, radishes and some fresh herbs.
