Keto Pumpkin Pecan Loaf
Ingredients
1 cup pumpkin puree
2 large eggs
100g Lewis Road Creamery butter, melted
⅓ cup ricotta cheese
1 tsp vanilla
1 cup almond flour
½ cup coconut flour
½ cup sugar replacement sweetener
2 tsp cinnamon
2 tsp pumpkin spice
1 Tbsp baking powder
⅔ cup pecans

Preheat your oven to 350°F. Line a standard 9-inch loaf pan with parchment paper.

Add all the ingredients to a large bowl, except pecans. Whisk everything together, until smooth. Pour into the prepared loaf pan. Top with the pecans.

Bake for 45-50 minutes, until golden and cooked through. The centre should feel firm to the touch.
