Keto Peanut Butter Fudge


Peanut Butter Filling:
150g Lewis Road creamery unsalted butter, melted
1 cup smooth peanut butter
1 teaspoon vanilla extract
¼ cup keto sugar replacement

Chocolate Topping:
200g keto-friendly dark chocolate, melted
Handful roasted salted peanuts, crushed

    In a medium bowl, mix the melted butter, peanut butter, vanilla extract, and sugar replacement. Whisk together, until smooth and creamy.

    Line a loaf tin with parchment paper. Pour peanut butter mixture into tin. Place in the refrigerator for at least 2 hours, until firm. Pour melted chocolate on top, then sprinkle over peanuts. Place back into the fridge, until chocolate has set.

    Cut into squares and store in the fridge.
